My healthy dinner – how to make it at home.

I love eating out at restaurants, it’s my vice. I must eat out at least 3 times a week and I love discovering new places. However, this can get quite pricey and I’ve recently realised that loads of the meals that I order off a menu in a restaurant, I could easily make myself at home! I recently went to a regular favourite, Pizza Express and although I had been craving a pizza I wanted something a bit healthier and ordered their Leggera Superfood Salad. It’s possibly the biggest salad I’ve ever seen and has so many tasty ingredients I didn’t have to force myself to eat it just to be healthy! I decided to write a post about the ingredients of my salad so you can make one for yourself and see just how good a healthy meal can taste. In fact, it was so good that my friend who had ordered a pizza was actually jealous of my meal – something I was expecting to be the other way round!

The Leggera Superfood Salad is so easy to make, all you need to buy from your local supermarket is:

– 1 bag of Baby Spinach
– 1 bag of Mixed Leaves
– 1 Cucumber
– 2 cooked and ready to eat Beetroots
– 1 roasted and ready to eat Butternut Squash
– 1 Avocado
– 1 bag of fresh Mozzarella
– a handful of Pine Nuts
– a handful of Lentils
– some fresh Basil
– Balsamic Syrup (optional)

The ‘cooking’ part is so simple – you literally chop it all up and put it in a bowl! I choose to leave off the balsamic syrup because I prefer the taste without it, alternatively you could always add your own salad dressing that you prefer. Another alternative is to add chicken or some salmon flakes to it if you want to, the great thing about this recipe is that it’s so easy to adapt it to your taste – and because of the hearty ingredients like beetroot and butternut squash it’s still really filling and doesn’t leave you wanting a massive pizza or pasta afterwards! Try making it for yourself and taking it to school or work in a Tupperware box and let me know what you think of the taste!

(OK so I did have a dessert after my salad but the dairy free raspberry sorbet looked too good to not eat – plus it’s fruit so it’s one of my 5 a day….therefore still healthy!)
